In fact, bran (the coarse outer layer of a kernel) and germ (the embryo of the seed) are rich in dietary fiber, vitamins and minerals that can be easily obtained from eating those whole grain foods.  In contrast, refined grains only retain endosperm (the inner part of a kernel) that contains carbohydrates and proteins. White flour, white bread and white rice are some examples of refined-grain products. If you choose to eat refined foods, you may not get those vitamins and minerals that whole grains naturally have. For this reason, people are now starting to choose more whole grain over refined grain products. Generally speaking, we are encouraged to consume at least 3 oz of whole grain foods every day.    ~By Onna Lee, Registered Dietitian
